Healthy Pumpkin Spice Latte Recipe

Hey y'all!

With the onset of fall brings back my (and probably yours, too) love for pumpkin spice everything. Ask anyone who knows me...I have a real passion for pumpkin spice, so much that it could probably be described as a little obsessive. And while I use to love the sugary goodness that was the PSL at Starbucks, now that I am more health-conscious, the insane sweetness is almost a little too much for me. Not to mention if you ever look at the nutritional contents of a PSL...its scarring. 

So my solution? Let's make a healthier, but still satisfying version! It's definitely not exactly the same, but it stays true to the spicey, pumpkin drink but without the guilt!


What You Need:

1 cup milk (I used soy, but you can use any kind)
2 TBSP pumpkin puree 
1/4 tsp pumpkin pie spice
1/4 tsp vanilla
1/4 cup hot coffee
Splenda, if desired



Step 1: brew your coffee.

I used a medium roast K-cup to make mine, and brewed it on the medium sized setting. I ended up using all of the coffee because I wanted a stronger coffee flavor. If you like the sweeter taste of the Starbucks version, I would recommend following more closely to the recipe above because the milk will overpower the coffee more. 





Step 2: combine all ingredients.

I mixed all of my ingredients (coffee, spices, pumpkin puree, vanilla, and milk) into a small bowl. I also wanted to mention that I only used half a cup of milk, again to bring out more of the coffee flavor and less of the overpowering sweet flavor. 


Step 3: whisk all ingredients together.

Next, you will want to beat all the ingredients together with a whisk. I then popped my container into the microwave to heat it evenly, since the milk cooled the coffee down really quickly. However, you can also do this over the stove if you want to be more professional!




Step 4: Serve & enjoy!

The best part -- enjoying your yummy, healthy, pumpkin spice drink! You can add in extras like some whipped cream or extra pumpkin pie spice on top to make it pretty, or if you're just drinking it for yourself, you can leave it as is! I added a packet of Splenda because I wanted it just a bit sweeter, but if you like a more spicy flavor, you might like it just the way it is.
